LORD STREET LUNCH CAKE

(A recipe from Southport)

1lb (450g) whole meal flour

6 teaspoons baking powder

2 eggs

3ozs (85g) currants

3ozs (85g) sultanas

1 teaspoon cinnamon

1½ teaspoons mixed spices

½lb (230g) margarine

½lb (230g) sugar

pinch of salt

milk to mix

 

LEMON CRISPS

Sift into a bowl:

6oz (170g) Flour

3oz (85g)Castor Sugar

1 pinch salt

2 teaspoons of Cream of Tartar

2 teaspoons of Bicarbonate of Soda

Then rub in 2oz (57g) of butter and add the grated rind of a lemon. Make into a stiff dough with the juice of the lemon and an egg, adding a little milk if needed, but keep the dough stiff.

Break off pieces with the hands and roll into tubes. Fasten the ends together, making into circles. Bake on a greased tin in a moderate oven for about 20 minutes.
