Helen McCormick's Butterscotch Cake
Boil the sugar, butter and water together for 2 minutes. Remove from stove and add remaining ingredients. Mix well and pour into greased cake pan. Bake 35 minutes at 350°F. Ice cake while still warm. This square is better if it is about 1½" thick.
Combine brown sugar, butter and cream. Boil together 5 minutes. Take from the stove and add icing sugar to stiffen, about 1 cup. Beat until it begins to thicken, and pour over the cake while warm.
Cook smoked ham and onion in the water in a 4-quart pot for 2 hours. Remove ham and onion; strain broth. Add potatoes, beans and herbs to broth and boil until potatoes are tender, but not overcooked. Remove meat from bone; cut finely and return to soup. Before serving, stir in cream or reserve cream to be added to individual bowls, as desired. Yield: 6-7 servings.
Mix above ingredients together and spread in a 9 x13 pan.
Sprinkle the top with a mixture of ¼ cup of sugar and 1 tsp of cinnamon.
Bake at 350°F for 30–35 minutes.
Test for doneness.
Wonderful with whipped cream.
